One of the most valuable and best varieties of honey. Bees collect it from the nectar of greenish yellow flowers  during the summer month of July.  

It brings a refreshing woody taste with a luscious, long-tasting twist of mint and menthol aroma.

Judges Comments:

The golden-yellow almost lemony appearance is just a joy to behold, and the natural woodiness from the linden complements the sweet honey aroma. The wash of almost sweet honey, linden and lemon like flower notes is delightful, and there is a subtle eucalyptus or medicinal flavour profile which takes your palate on a wonderful journey, almost as if the bees have allowed you into their foraging world. A delightful pale gold with hints of green and a deep glossy appearance. A very soft texture with a gentle hive and comb aroma with floral hints. The honey is delicately sweet with lifted notes of lime and blossom left tingling on the tongue. Simple and pure, yet it has depth and length and is a delightful reminder of summer. It would be a welcome addition drizzled over a bowl of ricotta or used for more dainty dishes.
