Judges Comments:
Wonderful deep amber, really inviting. Really tangy, with lots of vibrancy. Big honey flavour with no particular characteristics but this works in its favour and makes it stand out - it has a true and very special honey taste. An unusual colour in the jar - deep, almost a deep green but on the spoon, it is a lovely runny golden brown. To taste, this is a delight, clean, complex with hint of pine mixed with herbaceous notes. Great balance and a long comfortable finish.
A pleasing mid umber colour honey with a woody hive aroma. The texture is quite viscous with impressive smoothness on the tongue. There is a fine spread of suspended particles, perhaps wax and pollen, which add to the mouth feel. The initial flavour is lightly woody which develops to caramel tones and at all stages a strong sweetness. Altogether a very pleasant tasting experience.
